Irish Buttermilk Soda Bread 

4 C white flour - try and use good high gluten bread flour
1 1/2 t salt
1 t baking soda
2 C buttermilk

Preheat oven to 375 degrees and spray an 8 inch round cake pan. 

In a large bowl, stir dry ingredients together. Add the buttermilk
and stir until the dough cleans the side of the bowl and holds
together. Knead on a lightly floured surface for a minute, pat into
an 8 inch round about 1 1/2 inches thick. With a sharp knife, slash
an X into the top. Place the loaf in the cake pan, and bake for
about 45 to 50 minutes until nicely browned and the X has spread
open. Cool on a rack, then wrap in a damp towel and allow to rest on
the rack for 8 hours. Slice very thinly, 1/4 inch thick or less.

Soda Bread with Raisins

1 cup all-purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3 tablespoons granulated sugar
1 teaspoon caraway seed
1 cup raisins dark seedless
2 cups buttermilk
butter
sugar

Heat oven to 350F. Grease a large cast-iron skillet or baking
sheet. In a large bowl, mix 4 C. flour with the baking
powder, baking soda, salt, sugar and caraway seeds. Add
raisins, making sure they are separated. Add buttermilk
to a bowl and stir with a wooden spoon until mixture forms a
dough. Sprinkle about 1/4 cup of remaining flour on a board.
Turn out dough and knead lightly for about 5 minutes, working in
the flour from the board and forming dough into a smooth, round
loaf about 8 inches in diameter. Press loaf evenly into pan and
cut a cross 1/2 inch deep in the top. Bake 1hour and 15 minutes,
or until loaf sounds hollow when tapped on the bottom. Put
loaf on wire rack, rub top with butter, and sprinkle with sugar. 

Bonbon Chicken With Vegetables

Ingredients:

1 lb broccoli or 8 oz flowerettes
10 oz whole carrots
12 oz boneless skinless chicken breasts
1" piece fresh ginger
2 T Oriental sesame paste (tahini works fine-LD)
1-2 garlic cloves
3-4 T water
1-2 T Oriental chili sauce or hot chili paste with garlic
1 t sugar
2 T rice vinegar
5 T reduced-sodium soy sauce

1. Wash and trim broccoli. Cut into small flowerettes.
2. Scrape carrots. Slice thin in food processor. 
3. Simmer veggies in enough water to steam them. Cover. 
4. Cut chicken into strips. Add to veggies. Veggies should cook about 7 minutes in all. Chicken should be tender, and cooked through. Drain it all. 
5. While the rest is cooking, whirl the other ingredients in the food processor, starting with the garlic and ginger.
6. Toss the chicken, veggies, and sauce together. 

Baked Potato Slices

Ingredients:
4 medium even potatoes
1 tsp salt
2 to 3 Tbsp melted butter
2 to 3 Tbsp. chopped fresh herbs (parsley, chives, thyme, sage)
- or -
2 to 3 tsp. dried herbs
- or -
1.5 tsp caraway seeds or cumin
4 Tbsp grated Cheddar cheese
1.5 Tbsp Parmesan cheese

Preparation:

1) Peel potatoes if the skin is tough, otherwise just scrub and rinse
2) Cut potatoes into thin slices but not all the way through. Use a handle of a spoon to prevent the knife from cutting all the way.
3) Put potatoes in a baking dish. Fan them slightly.
4) Sprinkle with sale and drizzle with butter. Sprinkle with herbs.
5) Bake potatoes at 425 degrees for about 50 minutes
6) Remove from oven. Sprinkle with cheeses.
7) Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside. Check with a fork.
